The preparation time of this recipe is 30 minutes, and the cooking time is 20 minutes. The proportion of ingredients is enough for making 15 buns. However, if you want to make it in more or less proportion, you can adjust the ingredients accordingly.
Full-fat milk: 300ml, plus 2 tbsp more
Strong bread flour: 500g
Salt: 1 tsp
Caster sugar: 75g
Sunflower oil: 1 tbsp
Fast-action or easy-blend yeast: 7g sachet
Egg: 1, beaten
Mixed peel: 50g
Orange zest: 1
Apple: 1, peeled, cored and finely chopped
Ground cinnamon: 1 tsp
Plain flour: 75g, plus extra for dusting
Apricot jam: 3 tbsp
Hot Cross Buns: Method
To start with, bring the milk to boil. Once the milk starts to boil, remove it from heat and add the butter. Let the buttered milk cool until it reaches your room temperature. One by one, add the bread flour, salt, caster sugar and yeast in a separate bowl. Mix the ingredients well and make a small loop at the center. Pour the milk in it and also add the beaten egg. You need to use a wooden spoon or spatula to mix this now. After you have mixed the ingredients, use your hands to mend it until you get a very sticky dough.
Top the dough on a floured surface and knead it by holding with one hand and stretching with the other. Repeat this for 5-6 times until you get a smooth elasticity. Grease a bowl with oil and place the dough inside the bowl. Take an oiled cling film and cover the dough with it. Leave in a warm place for 1 hour to let the dough rise. The dough will gently rise and be doubled in size. When you press your finger onto it, it will leave a dent. Now, add mixed peel, orange zest, sultanas, apple and the ground cinnamon. Knead well to combine all the ingredients and again leave for 1 hour to rise by covering with an oiled cling film.
The Final Step: Baking
Divide the dough and make fifteen even round shaped pieces. Place the pieces on a baking sheet. Again you need to cover the pieces with an oiled cling film for another 1 hour. Heat oven to 230 degrees and make the cross lines on each dough. Now, make the paste for the cross with flour and water. Add it with a piping bag and bake the pieces for at least 20 minutes. Heat the apricot jam to melt and brush over the warm buns. Your hot cross buns are ready to serve with tea or coffee.
