Cooking oil: 5 tablespoons

Whole cloves: 3

Cardamom pods: 2

Large onions: 2 (finely chopped)

Green chile peppers with seeds: 3 (chopped)

 1-inch piece ginger: 1 (minced)

Garlic: 4 cloves (crushed)

Ground red chili pepper: 1 teaspoon

Ground turmeric: 1 teaspoon

Whole Cumin: ½ teaspoon

Ground coriander: ½ teaspoon

Salt: to taste

Skinless, boneless chicken breasts: 1 ½ pound (cut into bite-sized pieces)

Water: ¼ cup

Tomato puree: ½ can

Ground nutmeg: 1 teaspoon

Fresh cilantro: ½ cup (chopped) Garam masala: 1 teaspoon

Madras Curry: Method

Take a large skillet and heat oil in it. Keep the flame to medium heat. Add the cardamom pods and cloves. Roast for one to two minutes until they sizzle and leave a pleasant aroma. Add onions in it and fry until the color is light brown. This process can take seven to eight minutes. Some people prefer to cook the onions until deep brown. You can choose the color as per your preference.

Now, add ginger and garlic and fry for another one to two minutes. Add the chile peppers too. Once you see the ingredients nicely cooked, add the ground chile peppers, salt, coriander, cumin, and turmeric. Cook for another two to three minutes or until they leave a pleasant aroma. While frying the masala, you need to see two things carefully. Firstly, masala needs to be cooked properly. Secondly, the masala cannot burn and make the taste bland.

Add the chicken pieces and stir continuously. Add a little water and keep stirring. Cook the chicken for at least five minutes. Add water whenever you see the mixture is too dry. Also, do not add excess water as that would spoil the taste and texture of this madras curry. Then, add the tomato puree and nutmeg. Cover the pan with a lid and cook the chicken for at least fifteen minutes. You need to turn the flame to medium at this point in time.
