Merguez Sausage Ingredients

Whole cumin seed: 2 teaspoons
Whole coriander seed: 2 teaspoons
Fennel seed: 2 teaspoons
Paprika: 2 tablespoons
Kosher salt: 2 tablespoons
Cayenne pepper: 1 teaspoon
Lamb shoulder: 3 pounds (cut into 3/4-inch cubes and removed of gristle)
Lamb, beef, or pork fat: 1 pound (cut into 3/4-inch cubes)
Freshly minced garlic: 2 tablespoons (about six medium cloves)
Harissa: 1/3 cup
Ice water: 1/3 cup
Lamb casings: soaked in warm water for 30 minutes before use
Merguez Sausage Method:
Take a cast-iron skillet and roast the whole cumin, fennel, and coriander. It may take up to 2 minutes. Transfer the spices to a grinder and make a fine powder. Now, transfer it to a bowl and add salt, paprika, and cayenne. Take a large bowl and combine the lamb with fat in it. Mix it with the spice, harissa, and garlic. Then, freeze it for at least one hour. Once the mixture is frozen, take it out and grind. While grinding, you need to add very small proportions of ice water. You need to make the consistency sticky and smooth.
To check the seasoning of the mixture, make a small patty from the ground meat. Keep the rest in the refrigerator. Pan-fry the patty in medium heat until cooked. You can adjust the seasoning after tasting the patty. Now, it’s time to stuff the sausages into the casings. You need to twist these into 6-inch links. After all the work is done, refrigerate the sausages until you cook them.
